VINAIGRETTE RECIPE
How to prepare vinaigrette sauce
Ingredients:
- 2 tablespoons of vinegar (grape vinegar, apple cider vinegar, Modena vinegar, sherry vinegar, etc.).
- 6 tablespoons of olive oil or sunflower oil.
- 1 sprig of parsley.
- Salt.
- Lemon juice.
- Optionally you can add other vegetables such as: tomato, cucumber, green pepper, capers, gherkins, etc. and other spices or aromatic plants such as white pepper, black pepper, oregano, rosemary, thyme, sage, etc. Some cooks also prefer to add hard-boiled egg or yogurt.
Preparation:
- Clean and chop the parsley finely.
- Mix the vinegar and oil with a few drops of lemon juice and stir well until you get a homogeneous mixture. Add the parsley and stir everything very well.
- Sprinkle a little salt and taste to see if it contains enough salt and vinegar. Add a little more vinegar if it is too weak or dilute a little more oil if its taste is too strong.
- Optionally, you can add other vegetables, spices or aromatic herbs as long as you cut them into small pieces.
- Place the sauce in a vinegar cruet and store in the refrigerator, especially if the sauce contains yogurt or egg.
How to serve it:
- Serve with the vinegar cruet to season a multitude of dishes: salads, fish, seafood, artichokes, chickpeas, asparagus, etc.
