What is canary seed atole?
Atole, or atol, is a sweet beverage made from the decoction of certain grains or seeds. It is typically consumed in South America, and in Mexico, for example, you can still find canary seed atole in traditional markets.
Ingredients for canary seed atole
- 250g cornstarch or corn flour
- One cinnamon stick
- 2 liters of water
- 500g canary seed
Optional: Use 2 liters of canary seed drink directly
- 400g sugar
How to prepare canary seed atole
- Heat the water with the birdseed, cinnamon, and sugar. Cook covered for 30 minutes.
- Remove the cinnamon, grind it, and strain out the remaining fiber.
- Put the liquid back into the cooking pot and sift in the cornmeal, which will give the drink body.
- Stir well to prevent lumps from forming, and cook for approximately 30 minutes over medium-low heat, stirring every 5 minutes.
- Let it cool and serve very cold.
