Preparation of vegetarian potato vegetable pie
– Boil the potatoes whole with skin for about 10 minutes, or longer if large potatoes.
– Strain the water and pass the potatoes under cold water and retire the skin. Cut them into slices to about 1 inch thick.
– Wash the vegetables with salt and boil them for 2-3 minutes. Strain them and mix them with cheese, pepper and salt to taste.
– In a glass bowl, pour a drizzle of olive oil and cover it with a laminated potato base. Then, add the vegetables and finish with another layer of laminated potato. Season to taste.
– Sprinkle with cheese and cook it au gratin in the oven for 5 minutes.
