Ingredients of potatoes stuffed with mallows
- A bunch of mallow leaves, you can also use borage, nettles, dandelion or other edible vegetables.
- 4 medium potatoes
- Grated cheese
- 120ml of liquid cream or soy cream
Elaboration of potatoes stuffed with mallows
- Wash the bunch of mallows well and separate the leaves from the stem. One of the main important precautions when collecting mallows is to check that they do not contain fungi on the back of their leaves (rust).
- Boil the mallow leaves 5 minutes and drain.
- Mix in a blender the mallows with the cream, 1 tablespoon of cheese, and salt and pepper to taste. The result is a very tasty vegetable filling, which combines very well with the potato.
- Wash and peel the potatoes.
- Boil them, or steam them, then peel and cut each potato in half or sliced, to add the filling that we have prepared.
- Bake with a little cheese on top.

- Serve as a starter or as an accompaniment to main courses.
