Vegetable milk is a refreshing and nutritious drink, ideal in every balanced diet, especially for those who often have dairy digestive problems.
This recipe is made with nuts or seeds, such as hazelnuts, almonds, walnuts, pecans, Brazil nuts, macadamia nuts, etc.

Ingredients for homemade vegetable milk
- 230 gr almonds (raw)
- 20 gr brazil nuts (raw)
- 1 liter of water
- Sugar or honey
It is recommended for people with diabetes to replace the sugar with sweetener. To avoid the use of artificial sweeteners, you may use instead of water, a cold infusion of stevia.
Preparation of homemade vegetable milk
In this case this vegetable milk has been prepared with Brazil nuts and almonds, but the same recipe can be used for other nuts and seeds:
1 – Soak Brazil nuts and almonds with water for at least 3 hours in the refrigerator.
2 – Shred with a blender until forming a homogeneous liquid
3 – Strain the liquid to separate the milk from the ground nuts.
4 – Separating the milk can take a while, we can go stirring with a spoon to speed.
5 – With the solid waste, we can prepare cookies, breads, cakes, etc. It is a pasta in rich vegetable protein, healthy fats and minerals.
6 – Once you have strained milk, you can sweeten to taste. It’s got a fairly neutral flavor resembling “horchata“. In our case, we sweetened it with 3 tablespoons honey and 1 beaten banana.

What does this recipe provide?
Vegetable drink is rich in B vitamins, mainly thiamine, riboflavin, niacin and folic acid.
There is also lots of electrolytes and minerals such as, selenium, phosphorus, magnesium or calcium, given the presence of part of the crushed almond, which is suspended in the drink after straining.
If banana is added, it will have a thicker texture and contain more potassium and magnesium.
People with constipation problems can add chia seeds. Chia, when hydrated with water, form a gel which will help increase intestinal transit.
Therefore it will be a soft drink (almost no fat), energetic (especially sugar, fruit or honey is added) and moisturizing, ideal to refresh and replenish fluids, for example in summer, breakfast, snack for children or athletes after exercise.
For whom vegetable homemade milk is recommended ?
Vegetable milk lacks caffeine or other stimulants, and it does not contain gas (carbonated beverages), so it is healthy and recommended as a refreshing drink for all people, but especially in the diet of children, pregnant and elderly .
